Caramel Brookies
Caramel Brookies is an over-the-top decadent layered brookie bar recipe that is full of sweetness. Brownie batter, chocolate chip cookie dough, Caramel filled Hershey Kisses, chocolate chips, and of course sweet caramel sauce. Caramel Brookies
These brownie cookie bars are really simple to whip up. This is a fantastic weeknight dessert, holiday dessert, or even a sweet treat to make for a potluck.
To make these a bit easier, I used store-bought cookie dough for these chocolate chip cookie brownie bars. You can use my chocolate chip cookies recipe if you would prefer from-scratch cookie dough. Seriously, if you love cookies, brownies, and chocolate, try this recipe!
What are Brookies
Brookies are a combination of both cookies and brownies in a bar form. There's nothing like being able to get two of your favorite desserts in a single recipe!
These brookies also have caramel added to them for a whole new layer of flavor that's perfect for fall!
Caramel Brookie Bar Ingredients
- Store-bought Chocolate Chip Cookie Dough
- vegetable oil
- granulated sugar
- vanilla extract
- large eggs
- baking powder
- unsweetened cocoa powder
- salt
- all-purpose flour
- milk chocolate chips
- caramel Hershey kisses
- caramel sauce
How to make Caramel Brookies
Step 1. Start by preheating your oven and prepping your pan. I find lining the pan with aluminum foil helps in making you removing the bars a lot easier.
Step 2. Now take your raw cookie dough and place it into the pan and spread it out. Then you will top the cookie dough with Hershey kisses.
Step 3. You will work on your homemade brownie layer. Add the oil and sugar in a bowl and mix. Mix in the eggs and vanilla extract. Lastly, mix in the dry ingredients.
Step 4. Pour the brownie mixture over the brookies. Then top with chocolate chips and bake as directed.
Step 5. Once your caramel brookies are baked, you need to allow them to cool down on a baking rack for an hour. Then you can drizzle with sweet caramel sauce, and grab that fork and dive in!
How to store Brookies
Brookies can be stored on the counter or in the fridge. Just make sure the bars are fully cooled down completely. Then you will slice and place in the proper container.
These bars will store for around a week. Granted the first few days of making these bars will give you the best texture! If you don't plan to eat right away, then go ahead and freeze them.
How to freeze Brookies
Brookies freeze beautifully! All you have to do is make sure the bars are fully cooled. Then slice and place into a freezer-friendly container. They will store for up to three months.
Thaw in the fridge the night before you plan to eat. Or you can remove straight from freezer and warm up in the microwave for a fresh out of the oven temperature.

Caramel Brookies
Ingredients
- 16.5 ounce tube Pillsbury Chocolate Chip Cookie Dough any brand will work
- ยฝ cup vegetable oil
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ยฝ teaspoon baking powder
- โ cup unsweetened cocoa powder
- ยผ teaspoon salt
- ยฝ cup all-purpose flour
- ยฝ cup milk chocolate chips optional
- 33 caramel Hershey kisses unwrapped
- ยฝ cup caramel sauce
Instructions
- Preheat the oven to 350 degrees. Line a 9x9-inch baking pan with foil and grease with nonstick baking spray. The foil will help remove the brookies after they have cooled.
- Scoop spoonfuls of the cookie dough into the prepared pan and firmly press it into the bottom of the pan.
- Place the Hershey kisses in rows in the pan. Gently press them down into the cookie dough. Set aside.
- Add the oil and sugar in a medium bowl. Beat with a hand mixer on medium until combined.
- Add the eggs and vanilla extract and beat until the eggs are completely incorporated.
- In a separate bowl, add in the baking powder, cocoa powder, salt, and flour. Whisk to combine.
- Add the dry ingredients to the wet and beat with the hand mixer until all of the dry ingredients are incorporated.
- Pour the brownie mixture on top of the cookie dough layer and carefully spread across the top.
- Sprinkle the chocolate chips on top of the brownie batter.
- Place in the preheated oven and bake for 35-45 minutes, until a toothpick comes out clean. Let cool in the pan for about an hour before cutting.
- Before serving, drizzle some caramel sauce across the top.
