This Cherry Delight has layers of deliciousness. From the luscious cherry pie filling top and no-bake cheesecake filling to the graham cracker crust. This is the ultimate cherry dessert to bring to your next party.

The rich, bright, and delicious cheesecake filling does not disappoint. For best results, plan ahead so that you have time to refrigerate the dessert overnight.
Ingredients for Cherry Delight

Ingredients for the Crust
- Graham Cracker Crumb - You can also buy a preformed crust if you prefer convenience.
- Dark Brown Sugar - Light brown sugar will also work but will have less flavor. Do not pack the brown sugar into the measuring cup.
- Salted Butter - This will need to be melted. You can use unsalted butter if that's what you have, and add โ teaspoon of salt to the mixture to improve the flavor.
Cheesecake Filling Ingredients
- Cream Cheese - Buy a high-quality cream cheese, and make sure to get the block of cream cheese, not a tub, because it is softer and made for dipping.
- Vanilla Extract - Pure vanilla extract is preferred over imitation vanilla. You can use store-bought or homemade vanilla extract.
- Fresh Lemon Juice - You can squeeze your own or use some from a bottle if that's what you have. This adds brightness and cuts the richness.
- Powdered Sugar - Also called confectioner's sugar or icing sugar.
- Whipped Topping - You can buy this or make your own. Either work!
- Cherry Pie Filling - You will need two large cans, or you can make your own pie filling if you want. I just love the convenience of making this yummy dessert with as many pre-made ingredients as I can!
Substitutions and Variations
- You can also make the crust using crushed ginger snaps, crushed sandwich cookies, crushed vanilla wafers, crushedshortbread cookies, etc.
- You can use light brown sugar instead of dark brown sugar.
- Unsalted butter can be used in the crust. You may want to add just a pinch of salt if you do go with unsalted butter.
- You can add an additional 8 ounces of whipped topping over the cherry pie filling if you prefer.
- Not a fan of cherries? Use any type of pie filling you love with cheesecake! It's that simple to change the recipe to fit your taste.

How to Make Cherry Delight
The first step to making this fabulous dessert is to form your crust.

Step 1: Add the graham cracker crumbs and brown sugar to a large bowl. Mix until combined.
Step 2: Add the melted butter.
Step 3: Mix until combined and looks like wet sand.
Step 4: Press the crust mixture into a baking pan and refrigerate it while you make the cheesecake filling.

Next, you will make the cheesecake filling.
Step 5: Soften up the cream cheese with a mixer first.
Step 6: Add the vanilla, lemon juice, and powdered sugar. Beat this until light and fluffy.
Step 7: Fold in the whipped topping.
Step 8: Add the cheesecake filling to the crust and spread out evenly and all the way to the edges.

Step 9: Top this with two large cans of cherry pie filling. Place it back in the refrigerator to chill and set, at least overnight and up to 24 hours. Serve!
Tips for Best Results
Use an angled spatula to evenly spread the filling on top of the crust and to the edges of the baking dish. If you don’t have an angled spatula, it is easier to spread with a metal or wooden spatula than a silicone spatula.
Form the crust by evenly and firmly pressing the crust mixture down into the baking pan with a glass, measuring cup, or hand.
Here's how to fold in the whipped cream. Scoop the whipped cream from the container onto the top of the cream cheese mixture. Use a large silicone spatula. Gently insert the spatula deep into the mixture. Pull upward and then turn over the spatula, pressing down in a folding motion. Continue this motion gently over and over until all of the whipped cream is fully incorporated into the cream cheese. This allows it to keep its light and fluffy structure.

How to Store/Freeze
To store this Cherry Delight Dessert, cover with plastic wrap or store in an airtight container in the refrigerator for up to 5 days.
To freeze this dessert, leave the cherry pie filling off and wrap the pan with the crust and cheesecake filling tightly in two layers of plastic wrap. Next wrap in a heavy-duty aluminum foil and place in the freezer for up to 3 months.
You can also store it in a freezer container or freezer bag if it will fit.
To thaw, place in the refrigerator overnight. Before serving, add the cherry pie filling to the top of cheesecake.

- 2 cups graham cracker crumbs about 16 whole graham crackers
- ยฝ cup dark brown sugar not packed
- ยพ cup salted butter melted
Cheesecake Filling
- 16 ounces cream cheese room temperature
- 1 tablespoon vanilla extract
- 1 tablespoon fresh lemon juice
- ยพ cup powdered sugar
- 8 ounces whipped topping
Topping
- 2 (20 ounce) cans of cherry pie filling
Instructions
Crust
- Lghtly grease a 9x13 baking dish with nonstick cooking spray.
- In a small bowl, add graham cracker crumbs, sugar, and melted butter. Stir until the butter has coated all of the graham cracker crumbs.
- Pour the crust mixture into the prepared pan. Form a crust by evenly and firmly pressing the crust mixture down with a glass, measuring cup, or hand.
- Place in the fridge to firm up while preparing the cheesecake filling.
Cheesecake Filling
- In a large mixing bowl, add the cream cheese. Beat with a hand mixer on medium speed until smooth. Scrape down the sides of the bowl.
- Add the vanilla, lemon juice, and powdered sugar. Continue to beat until well combined. Scrap down the sides and bottom of the bowl and beat in any remaining bits until creamy.
- Add the whipped topping and fold in using a spatula until incorporated.
- Scrape the cheesecake filling on top of the graham cracker crust. Use an angled spatula to evenly spread the filling on top of the crust and to the edges of the baking dish. If you don’t have an angled spatula, it is easier to spread with a metal or wooden spatula than a silicone spatula.
Topping
- Add the cherry pie filling to the top of the cheesecake filling and spread evenly.
- Cover with plastic wrap and place in the fridge overnight to set up.
