Head to the store or your favorite apple orchard and pick some apples and let's make an incredible dessert for your fall and winter cravings. The spices in this fritter cake are phenomenal, paired to the tender bits of apple throughout.
How to make Apple Fritter Cake
You start by making your cake. To make the cake, add the butter and sugar in a bowl and beat with a hand mixer until creamed. Add the vanilla, buttermilk, and eggs one at a time until combined. Add the dry ingredients into the butter mixture and beat just until the flour is worked into the batter. Fold in the apples. You can choose to do grated apples or diced apples.
Spread the batter in an 8x8 square pan. Add the brown sugar and cinnamon mixture in a small bowl. Stir to combine and sprinkle on top of the batter. Using a butter knife or skewer, swirl the cinnamon and sugar into the cake. Sprinkle the walnuts on top of the cake. The walnuts offer such a nice crunch to the cake.
Bake your cake in the oven. Once it is done, make a homemade vanilla glaze to pour over the freshly baked apple fritter cake. To make the glaze, whisk together milk, vanilla, and powdered sugar. Talk about one easy apple dessert recipe!

What Apples Work Best For Apple Fritter Cake
I reached for a granny smith apple. The texture of the apple bakes well and offers that sweet and tart flavor. You are more than welcome to reach for any other type of baking apple for your fritters. Honeycrisps, Braeburn, Pink Lady, and the list goes on. Using Granny Smith apples is not a must.
Best Way To Store Apple Fritter Cake
I recommend placing your cake in an airtight container or placing a lid over you cake pan. Then store in the fridge for up to 4-5 days, or on the counter at room temperature for 1-2. This cake will last longer if stored in the refrigerator.
If you prefer the cake texture at room temperature, just slice and let it sit out for a little bit to warm up, then serve. Or pop in the microwave for a quick reheat for that fresh out of the oven taste.
Can You Freeze Apple Fritter Cake
Sure. This can should freeze without any problems. Simply let your cake cool down completely, and then wrap up in aluminum foil. Then place in a freezer bag or airtight container and store in the freezer for up to three months.
I have found that slicing the cake and wrapping it up in individual slices works great at grabbing just a slice or two when you get a craving. Then just thaw in the fridge or on the counter, and enjoy.
Apple Fritter Cake
- ⅓ cup brown sugar
- 1 teaspoon ground cinnamon
- ⅔ cup granulated sugar
- ½ cup unsalted butter
- 2 large eggs
- 1 ½ teaspoons vanilla extract
- 1 ½ cups all-purpose flour
- 1 ¾ teaspoons baking powder
- ½ cup buttermilk
- 1 - 2 granny smith apples peeled and either diced or grated (I grated in this recipe)
- ½ cup crushed walnuts optional
- ½ cup powdered sugar
- 2 - 4 tablespoons heavy cream
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees. Spray an 8x8 baking pan with non-stick spray or line the pan with foil and spray the foil with non-stick spray.
- In a small bowl, add the brown sugar and cinnamon. Stir to combine and set aside.
- In a large bowl, add granulated sugar and the butter. Beat with a hand mixer until creamed.
- Add the vanilla extract, one egg, buttermilk and beat until well combined. Scrape down the sides and bottom of the bowl.
- Add the second egg and beat until the egg is incorporated. Set aside.
- In a separate bowl, add the baking powder and flour. Stir to combine.
- Add the dry ingredients to the wet ingredients. Fold in with a spatula until the flour is worked into the batter.
- Fold the grated or diced apple into the batter.
- Pour the batter into a prepared baking pan. Spread the batter out with a spatula.
- Sprinkle the brown sugar/cinnamon mixture all over the top and swirl it through the batter using a skewer.
- Top with the walnuts.
- Place in the oven and bake for 40-50 minutes or until done. Insert a toothpick into the center of the cake and if it comes out clean or with crumbs, it's done.
- As soon as the cake comes out of the oven, prepare the glaze to pour over the top.
- In a medium bowl, add in vanilla, 2 tablespoon of heavy cream, and powdered sugar. Mix with a spatula until combined.
- Add an additional 1 tablespoon of heavy cream at a time to the powdered sugar until the glaze is pourable.
- Drizzle all over the top of the warm cake and cut to serve.
