These chocolate chip cookie dough cheesecake bars are so amazing! I made my base out of store-bought chocolate chip cookies that are finely crushed. I then added a layer of cheesecake and a layer or cookie dough on top. Everything about this cookie makes me smile.
I would love to take credit for this recipe, because it’s a killer one. It wasn’t difficult to make, makes a pretty bar, and most importantly tastes like heaven. However, this recipe belongs to a lady that would have been the big 5-0 today, Joan of Chocolate, Chocolate and More!
A bunch of us blogger friends got together and we each made a recipe of Joan’s. We’ll be linking to the actual recipes on her site. Maybe you’re not especially fond of the idea of having to click over, but it’s for a good reason. The extra traffic will bring funds to her site that will in return go to her three children. Sounds like a pretty great idea, right?
In her recipe, she says that she uses shortbread cookies and adds chocolate chips into the crumbs. I didn’t add the chocolate chips. Instead I used chocolate chip cookies. That’s why my cookie base is darker than hers. I also let my bars set up overnight in the fridge and then sliced them. It gives me the neat edges that I like to see and holds them together better. If you’re like my husband and can’t possibly wait that long, you can just cool them and cut them. They probably will be a little crumbly though. If you have any left, you will need to store them in the fridge because they do have cheesecake in them.
