These malted milk blondies are delicious blondie brownies made with malted milk powder and other pantry staples. They're chewy, and are reminiscent of malted milk balls. They give the flavor of "cereal milk"—sweet, buttery, and downright addictive.

Six square malted milk blondies on a white surface, one turned on its side revealing the interior texture. Crumbs scattered around.

Malted milk powder is often used to mix into milkshakes to make them a malt. It transforms the flavor with a grain/cereal flavor. I wanted to step out and try a new way to use the powder, which is how malted milk blondies were created.

It's not my first time throwing malted milk into recipes though. I have these delicious malted milk cookies and these mini no bake malted milk cheesecakes that I've made in previous years.

Ingredients Needed

Ingredients for baking blondies on a table: eggs, flour, a butter stick, baking powder, salt, brown sugar, vanilla extract, and malted milk.

See the recipe card at the bottom of the post for all ingredients and quantities.

  • Butter: Choose unsalted butter at room temperature. If you use salted butter, leave the salt out of the recipe.
  • Brown Sugar: The brown sugar will add a subtle caramel flavor to the blondie brownies.
  • Malted Milk Powder: You can buy this at the grocery store in the aisle with the chocolate milk powders and syrups.
  • Egg: Large eggs that are at room temperature.
  • Vanilla: Vanilla is a secret ingredient in baking that enhances the overall flavor.
  • Flour: All-purpose flour is used to help create a structure for the bars.
  • Baking Powder: This will help create the perfect chewy and fluffy texture.
  • Salt: Table salt works great.

Substitutions and Variations

  • After you pour your blondies into the pan, melt ¼ cup of peanut butter and swirl it into the brownies.
  • Add some chocolate, caramel, or even peanut butter chips.
  • Mix in 1 teaspoon of espresso instant powder for a mild coffee flavor to the blondies.
  • Mix in some nuts from pecans, walnuts, or even almonds.

How to Make Malted Milk Brownies

Follow this four-step baking process for perfect blondies: (1) Butter smoothly blends in a bowl, (2) Creamed with malted milk mixture, (3) Achieve a smoother consistency, (4) Shape the dough onto a baking sheet. Highlighting ingredients like eggs and vanilla extract ensures rich flavor.

Step 1 & 2: In a large bowl or mixer, cream butter, malt powder, and brown sugar. Mix to combine and let stand for 2 minutes until light and fluffy.

Step 3: Add in the eggs and vanilla. Make sure to scrape down the sides of the bowl.

Step 4 & 5: Mix in the flour, baking powder, and salt. Mix enough to combine the ingredients. Pour into the pan and spread into an even layer. Then, bake as directed.

Step 6: Allow the blondies to cool a bit, then slice and serve.

Tips and Tricks

  • It is important not to overmix the dry ingredients with the wet once you mix them in. Doing so will cause your brownies to lose their soft and chewy texture.
  • Room temperature ingredients are recommended as they will better help the ingredients cream together in the brownie batter.
  • Do not overbake the brownies. You want to use the baking time as a guide and check them before the time is up to ensure if they are done, you remove them.
  • Allowing your brownies to cool before slicing will help ensure they are set up and won't fall apart when you try to remove them from the pan.
Three stacked blondies sit on a plate, with a jar and a bowl of mixed nuts in the background, exuding a hint of malted milk for an irresistible twist.

Storing and Freezing

The brownies can be stored at room temperature in a sealed container for up to 4 days or extend their life and refrigerate them for up to a week.

You can freeze the brownies for up to 3 months if you want to freeze. Slice and wrap each blondie in 2 layers of plastic wrap and then place in a freezer bag or freezer-safe container. Then, you have an easy grab-and-go treat.

Recipe FAQs

Can I use dark brown sugar instead of light brown sugar?

Dark brown sugar can be used to replace light. This will give you a richer flavor, as the molasses and caramel-like flavor will stand out more.

Can I make these brownies gluten-free?

Reach for your favorite gluten-free flour blend and swap out the all-purpose flour in a 1:1 ratio. They should bake for the same amount of time.

Can I add cocoa powder to make them chocolatey?

To create a chocolate malt blondie, add ¼ cup of cocoa powder to the batter. Just add the cocoa powder when you mix in the flour.
