  • Cream Cheese – Reach for softened cream cheese for the base of the truffles. This helps create the perfect consistency.
  • Almond Bark – White almond bark is what I used for the candy coating on the outside of the truffles.
  • Candy Melts – Red candy melts are great for a drizzle on top of each of the truffles.
  • Sanding Sugar – Green sanding sugar is the traditional topping for Christmas tree cakes. So why not add it on top of your truffles so they know exactly what it will taste like?

Substitutions and Variations

  • White chocolate – Instead of almond bark use white chocolate chips, or even baking white chocolate. Make sure to add 1 teaspoon of coconut oil to the chocolate or shortening to help it set up firmly.
  • Different Chocolate – Any color of candy melts or flavor of chocolate you can mix it up. Milk chocolate, dark chocolate, etc.
  • Decorating – You can decorate the truffles with sprinkles, and melted chocolate, or leave them plain if you want. Feel free to get creative.
  • Flavor of Cakes – If you are lucky you can find some chocolate cakes to mix into the truffles instead of a vanilla version.

Step-by-Step Instructions

Three-step cookie recipe process: 1) Decorated cookies and butter in a bowl, 2) Mixed cookie dough in a bowl, 3) Dough balls arranged on a parchment-lined baking sheet—perfect for festive treats like Christmas Tree Cake Balls.
  1. Start by adding the softened cream cheese in a bowl. Mix on medium speed to cream together. Then scrape down the sides.
  2. Add the Christmas cakes to the bowl and mix until the cakes are well broken down and combined.
  3. Line a baking sheet with parchment paper or wax paper. Then use a cookie scoop and make truffle balls and place on the tray.
  4. Freeze the truffles as directed. Then when done, melt white chocolate.
  5. Dip the truffles in the almond bark and shake off the excess. Place on the parchment paper lined tray. Add green sanding sugar on top of the truffles.
  6. Melt red candy melts, and place in a piping bag or sandwich bag with a tip cut off. Drizzle on top, and let harden.

Storage

Place the Little debbie Christmas tree cake balls in an airtight container in the fridge for 3-5 days.

Another option is freezing the cake balls. Place in a freezer-friendly container and freeze for 2-4 months. Then eat straight from the freezer or thaw in the fridge overnight.

Tips for Success

  • Shake off the excess chocolate on the truffle balls before you place it on the wax paper. This will help prevent the chocolate from pooling up at the bottom.
  • Using a cookie scoop is going to allow you to create uniform-sized truffles that will look great for presentation to family and friends.
  • Make sure to allow time for the truffles to freeze, so when you dip in the chocolate it does not disform the truffle balls.
  • The cream cheese needs to be softened otherwise it will not mix properly with the other ingredients.
  • If you don’t own piping bags grab a Ziploc bag and place melted chocolate inside. With scissors cut a small tip off the side and use that for piping the red drizzle of chocolate onto the truffles.

Go right ahead and use crumbled homemade cake instead of Little Debbie Christmas tree cakes. You will get a similar flavor but the traditional cake will be less sweet than the tree cakes you buy.

How long do I need to chill the truffle mixture before rolling into balls?

You at least need to let the truffles for at least 2 hours to overnight. You need to get the cream cheese mixture nice and firm. Otherwise, when you go to dip it is going to instantly melt and you run the risk of the balls falling apart.

Ingredients
  

  • 10 Little Debbie Christmas Tree Cakes two 5 count boxes
  • 8 ounces cream cheese room temperature
  • 16 ounces white almond bark
  • 1 cup red candy melts
  • Green sanding sugar

Instructions
 

  • In a large bowl, add the 8 ounces cream cheese. Beat with a hand mixer on medium speed until smooth. Scrape down the sides of the bowl.
  • Add 10 Little Debbie Christmas Tree Cakes to the cream cheese and beat until well combined.
  • Line a baking sheet with parchment paper. Using a 1 tablespoon cookie scoop, scoop out and roll 24 truffles from the cake mixture. If the truffles stick to your hands, lightly grease them with vegetable/canola oil.
  • Place the truffles in the freezer for at least 2 hours but preferable overnight to firm up completely.
  • Once the truffles are chilled, place the 16 ounces white almond bark in a medium microwave-safe bowl. Microwave in 30-second intervals and stir after each interval until the almond bark is smooth and fully melted.
  • Using 2 forks or a fork in a wooden skewer, dip the truffles into the chocolate, scoop out using one fork, gently shaking off the excess and place them back onto the parchment lined tray using the second fork/skewer.
  • Immediately sprinkle the green sanding sugar on the truffles while the white chocolate is still wet.
  • In a small microwave-safe bowl, add 1 cup red candy meltss. Microwave in 30-second intervals and stir after each interval until smooth and fully melted. If the mixture is too thick, melt 1 tablespoon on refined coconut oil in the microwave and slowly pour it into the candy melts and stir until you reach the desired consistency. Don’t add the coconut oil all at once as you may thin the candy melts too much.
  • Place the melted red candy melts into a storage bag. Cut a very small corner off the storage bag.
  • Drizzle the red candy melts back and forth over the truffles. Set aside until the red candy melt drizzle has firmed up. You can pop them into the fridge for 10 minutes for a quicker result.
  • Store in an airtight container in the fridge for up to 5 to 7 days.

Chrsistmas Tree Cakes: You can use the chocolate Christmas Tree Cakes or zebra cakes if you prefer.
Storage: Store leftovers in an airtight container in the fridge for up to 5 days.
Freezing: Place in a freezer-friendly container and freeze for 2-4 months. Then eat straight from the freezer or thaw in the fridge overnight. The chocolate may crack as the cookies freeze/thaw.
