Ingredients
Cake
- 1 (15.25 ounce) boxed yellow cake mix
- 3 ripe bananas peeled and mashed
- ยฝ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Frosting
- 1 cup butter room temperature
- ยฝ cup unsweetened cocoa powder
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 4 - 5 tablespoons heavy cream
Instructions
Cake
- Preheat oven to 350 degrees. Spray a 9x13 baking pan with nonstick baking spray.
- Add the peeled bananas to a large bowl and mash with a fork.
- Add oil (or 1 stick of butter melted), eggs, and vanilla. Using a whisk, mix until combined.
- Add in the yellow cake mix until whisk until all ingredients are blended together.
- Pour the batter in the prepared pan. Spread the batter evenly in the pan.
- Place in the oven and bake for 25 to 30 minutes or until a toothpick inserted in the middle comes out clean or with moist crumbs.
- Cool completely before frosting.
Frosting
- In a large mixing bowl, add in the butter and cocoa powder. Beat with a hand mixer until creamy.
- Add in the powdered sugar, vanilla, and heavy cream and continue to beat until combined. You may add additional heavy cream 1 tablespoon at a time to get the desired consistency of frosting.
- Spread the frosting on top of the cake with an offset spatula.
- Cut and serve.

I'd give this 10 stars if I could. I found this recipe 2 years ago on your site. Absolutely love it, it's so easy and I make it at least once a month using either fresh or frozen bananas and it always comes out great, you can't ruin it. Sometimes instead of the chocolate frosting (which is fantastic) I use cream cheese or vanilla buttercream. They all work with this cake. In fact, my son-in-law who will never pick up a banana and eat it loves this cake! He asked me if I could bring this cake to his house next Sunday for a Father's Day celebration. Will probably bake at least 2 of them as we'll have the family there. I was thinking of possibly either doubling or tripling the recipe and making a sheet cake for a crowd, but wasn't sure if it would come out the same as far as texture and if the baking time would be the same. Maybe I should not experiment and possibly waste good ingredients, especially when I have to bring this cake to a party. What do you think? Can this recipe be doubled or tripled with good results and have you ever tried it?

How long would I bake this if making cupcakes?
Bake them for about 20-25 minutes! When the tops are golden brown and spring back to the touch, they are ready!
I made this it was the best ,so moist I added 11/2 cups of blueberries! I love this cake I made this for Easter and everyone asked for the recipe!

Do you not use milk with the cake mix?
I don't use milk for this recipe. The bananas are pretty juicy and moist! They make up for the milk.
This was the best banana cake I have ever made and so easy using a yellow cake mix. (so moist, but not dense and heavy) like other banana cakes I have made in the past. My husband can't stop raving about it! The only thing I did different was I used canned cream cheese frosting (didn't have cream cheese to make from scratch). Maybe next time I'll try your chocolate frosting recipe.
