My white chocolate coconut truffles are so simple that you will wonder why you ever bought truffles in the past. You can just make them! Here is what you will need to make coconut truffles:

  • White baking chocolate – Choose a good white chocolate to use in this recipe as this is the main flavor you will enjoy when you pop a truffle into your mouth.
  • Butter – High quality butter make the truffles silky smooth. 
  • Heavy cream – Rich heavy cream gives the truffles their soft texture
  • Vanilla extract – Vanilla enhances the flavor of the coconut truffles
  • Desiccated coconut – Coconut is the main flavor of the truffles and it also adds a little chewy texture. 

TIP: You only need five ingredients to make white chocolate coconut truffles. Try to choose high quality ingredients to make the best truffles.

Substitutions and Variations

  • Use dark chocolate in place of white chocolate for a richer truffle. Replace the white chocolate with the same amount of dark chocolate but add 2 Tablespoons extra heavy cream. 
  • Toast the coconut for the outside of the truffles. Toasted coconut has even more flavor and gives the truffles a pretty golden brown color. 
  • Use canned coconut cream in place of heavy cream for an even stronger coconut flavor
  • Use almond extract in place of vanilla for a slightly nutty taste
  • Once the coconut filling is firm and cooled, stir in ¼ cup mini chocolate chips for a speckled, white and black truffle
  • Roll the coconut truffles in finely chopped nuts instead of shredded coconut. This adds a nice crunch and new flavor

How to Make White Chocolate Coconut Truffles

Four-step baking process: 1. Bowl of smooth batter. 2. Added sugar, butter, and vanilla. 3. Additional ingredients like coconut mixed in. 4. Final creamy mixture perfect for white chocolate truffles.
  1. Use a double boiler or microwave to slowly melt the white chocolate. 
  2. Add ¾ cup of the desiccated coconut to the chocolate along with the butter, vanilla and cream.
  3. Stir everything together well and then cover the bowl with plastic wrap. 
  4. Place the bowl in the fridge and let it cool for at least an hour. This will let the chocolate set and get firm. 
  5. Scoop the white chocolate truffle filling into tablespoon sized balls and roll each ball into a perfect circle using your hands. Roll the truffle ball in the remaining desiccated coconut, coating the entire outside of the truffle. (Pictured Below)

Who knew homemade truffles could be so simple to make! Not only do these truffles look like they came from a chocolate shop, but they also taste incredible. They are so full of sweet coconut flavor that you won’t be able to resist them!

How to Store and Freeze

Once you have made beautiful white chocolate and coconut truffles, you want to be sure they stay fresh! Place the truffles in an airtight container and seal them well. A plastic container with a locking lid or just a zippered plastic bag will work.

Store them in the fridge for up to two weeks. You can also place the wrapped truffles in the freezer and keep them frozen for up to two months. That the truffles in the fridge and then enjoy! 

You can freeze white chocolate coconut truffles in an airtight container or tightly zippered plastic freezer bag. The truffles will keep in the freezer for up to two months. Thaw them in the refrigerator overnight and they’ll be ready for you the following day.

Recipe FAQs

What to do if my white chocolate truffle mixture is runny?

If your white chocolate truffle mixture is runny, mix in a little extra white chocolate. Keep in mind that the mixture will get more firm as it chills in the fridge. Add up to ½ cup extra melted white chocolate and see how the texture of the truffles are once cold. If it is still runny, reheat the mix over a double boiler, add another ½ cup white chocolate and chill again. 

Can I use chocolate chips instead of white baking chocolate?

White baking chocolate has cocoa butter while regular white chocolate chips do not. This makes the white baking chocolate more firm. If you choose to use white chocolate chips instead of baking chocolate, you will need to use more white chocolate chips to get the proper texture of the filling. About 3 cups of white chocolate chips will give you the correct consistency for truffles. Try to stick with the white baking chocolate for a stronger, better tasting truffle. 

Can I add alcohol to this recipe?

You can add about 2 tablespoons of alcohol to the truffle mix with great success. You will want to reduce the amount of heavy cream by 2 Tablespoons as well since you are mixing more liquid into the truffle center. Too much liquid will make the truffles soft!

Ingredients
  

  • 2 cups white baking chocolate chopped into medium pieces
  • 1 ½ tablespoons butter room temperature
  • ¼ cup heavy whipping cream
  • 2 teaspoons vanilla extract
  • 1 ½ cups desiccated coconut divided

Instructions

  • Melt the white chocolate in microwave until smooth and creamy or use double boiler method to melt the chocolate on stove.
  • Add in around ¾ cup of desiccated coconut followed by butter, vanilla extract and cream.
  • Mix everything and cover the bowl with plastic wrap, place it in the fridge for at least 1 hour.
  • Once the mixture the little firm, spoon out 1 tablespoon per one truffle and form them into balls using hands.
  • Once done roll the truffles into the left-over desiccated coconut and refrigerate until firm.
  • Store the truffles in airtight container in fridge.
