Spring is right around the corner. That being said, we have loads of birthdays coming right up. One of the best things you can do for a family like mine is make them an overly decadent bar such as these peanut butter chocolate chip cheesecake bars to celebrate another year.
Over the top? Yes. But we're celebrating, so it's perfectly acceptable.
When Nestle Toll House contacted me about working with their new DelightFulls chocolate chips, I was thrilled. I love them and have already used the caramel filled chips in a chocolate chip cookie dough wreath recipe just before Christmas. This time I went with the peanut butter filled chips, because I've been on a peanut butter frenzy. They also have cherry and mint filled chocolate chips. These chips are fantastic. They add a cuteness when you cut into your baked good and you can see that the centers of the chips with a surprise flavor in them.
These peanut butter chocolate chip cheesecake bars are dense and packed full of peanut butter and cheesecake. The bottom layer of cookie is very soft and slightly underdone. Underdone is a good thing.
To save time, the top is the same cookie, but crumbled and gently put on top of the cheesecake mixture. It adds amazing texture.
One of my most favorite things that happens every single time I bake is when I've placed something in the oven and it has baked for awhile and the aromas start to flow. It's not so much the smell that is my favorite, but the excitement from my family when they get a whiff of the warm, sweet treats baking. I can mentally picture their eyes being light up and grins that are from ear-to-ear.

Peanut Butter Chocolate Chip Cheesecake Bars
Ingredients
Cookie
- 1 cup butter room temperature
- 1 cup creamy peanut butter
- 1 ½ cups brown sugar packed
- ½ cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 9 ounces Nestle Peanut Butter DelightFulls
Cheesecake
- 8 ounces cream cheese room temperature
- ¼ cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
Instructions
Cookie
- Preheat oven to 350 degrees. Spray the bottom of a 11x7 pan with non-stick cooking spray. Cut a piece of parchment paper to fit the bottom of the pan and to hang over the two ends.
- In a large mixing bowl, add in the butter and peanut butter. Mix on medium until combined.
- Add in brown and granulated sugars and mix until light and fluffy. It will take 2-3 minutes of mixing.
- Add in the egg and vanilla. Mix on medium until the egg is incorporated.
- Add the flour, baking soda, and salt into the butter mixture. Mix on low until the dough forms a ball.
- Add in the chocolate chips and mix until the chips are incorporated into the dough. Set aside.
Cheesecake
- In a medium mixing bowl, add in the cream cheese and sugar. Mix until light and fluffy.
- Add in the egg and vanilla. I used vanilla bean paste for the cheesecake mixture, but vanilla extract will work fine. Mix until completely combined.
- Divide the dough in half. Press one half of the dough into the prepared pan. Be sure to firmly press it into an even layer.
- Pour the cheesecake mixture on top of the cookie base.
- Gently crumble the remaining cookie dough on top of the cheesecake mixture. It should cover all of the cream cheese mixture. The pan will be very full, but it won't spill over.
- Place in the oven and bake for 30 minutes. Remove from the oven and let cool completely.
- Place in the fridge to chill for 2 -3 hours. Cut and serve.

Delightfuls are like stuffed chocolate chips. They are chocolate on the outside with peanut butter inside. If you can't find them, you can use peanut butter chips or regular chocolate chips!
