Step 1: Mix together the flour, sugar, salt, and cold butter until the butter reaches mixture reaches a coarse crumb consistency.

  • Be sure to press the crust firmly into the prepared pan to prevent the crust from crumbling when serving.
  • Pour the filling onto the hot crust! Adding the filling while the crust is still warm helps the layers bond together.

  • Pure maple syrup pairs so well with pecans and brown sugar. I recommend it being pure and not pancake maple syrup.

How to Store and Freeze

Store the cooled pecan pie bars in an airtight container in the refrigerator for up to 5 days.

You can serve them chilled or let them sit at room temperature for about 20 minutes before serving.

To freeze the baked pecan pie bars, let them cool completely first. Once they’re cooled, wrap them in the pan or individually tightly in two layers of plastic. If you’re freezing the whole pan, wrap it in an additional layer of heavy-duty aluminum foil. If you’re wrapping individual slices, place them in a freezer bag and place in the freezer for up to 3 months.

Thaw the bars overnight in the fridge or place them out at room temperature for 30 minutes to 1 hour.

Ingredients
  

Shortbread Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup butter, cold and cubed

Pecan Pie Filling

  • 3 large eggs
  • 1/2 cup pure maple syrup
  • 1/2 cup light corn syrup
  • 1/2 cup light brown sugar, packed
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Instructions
 

Shortbread Crust

  1. Preheat the oven to 350 degrees F. Grease a 9×13-inch baking pan with nonstick cooking spray.
  2. In a large mixing bowl, add the 1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, and 1/2 teaspoon salt. Whisk until combined.
  3. Add the cold, cubed 3/4 cup butter. Using a pastry cutter, two knives, or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Press the shortbread crust mixture firmly and evenly into the bottom of the prepared baking pan. Use the bottom of a glass to help keep the crust even and to further pack the crust.
  5. Place in the preheated oven and bake for about 30-35 minutes or until lightly golden brown.

Pecan Pie Filling

  1. In a medium bowl, add 3 large eggs, 1/2 cup pure maple syrup, 1/2 cup light corn syrup, 1/2 cup light brown sugar, melted 2 tablespoons butter, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Whisk until well combined.
  2. Stir in the 1 cup chopped pecans until they are evenly coated in the filling mixture.
  3. Pour the pecan pie filling evenly over the hot crust.
  4. Return the pan to the oven and bake for an additional 25-30 minutes, or until the pecan pie filling is set and no longer bubbling up. Check for doneness by gently jiggling the pan. The filling shouldn’t jiggle in the center and the edges will be golden.
  5. Allow the pecan pie bars to cool completely in the pan.
