These pecan pie bars feature a buttery homemade shortbread crust topped with a rich, gooey pecan pie filling made with maple syrup, brown sugar, and chopped pecans. They're an easy alternative to classic pecan pie and perfect for Thanksgiving, Christmas, bake sales, and holiday dessert trays.
Preheat the oven to 350 degrees F. Grease a 9x13-inch baking pan with nonstick cooking spray.
In a large mixing bowl, add the 1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, and 1/2 teaspoon salt. Whisk until combined.
Add the cold, cubed 3/4 cup butter. Using a pastry cutter, two knives, or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Press the shortbread crust mixture firmly and evenly into the bottom of the prepared baking pan. Use the bottom of a glass to help keep the crust even and to further pack the crust.
Place in the preheated oven and bake for about 30-35 minutes or until lightly golden brown.
Pecan Pie Filling
In a medium bowl, add 3 large eggs, 1/2 cup pure maple syrup, 1/2 cup light corn syrup, 1/2 cup light brown sugar, melted 2 tablespoons butter, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Whisk until well combined.
Stir in the 1 cup chopped pecans until they are evenly coated in the filling mixture.
Pour the pecan pie filling evenly over the hot crust.
Return the pan to the oven and bake for an additional 25-30 minutes, or until the pecan pie filling is set and no longer bubbling up. Check for doneness by gently jiggling the pan. The filling shouldn’t jiggle in the center and the edges will be golden.
Allow the pecan pie bars to cool completely in the pan.
