I had to share these incredibly easy Thor Cupcakes in honor of the new Avengers movie. The cupcakes are a red velvet cake and topped with a red velvet frosting. Thor’s hammer is made of pretzels and fondant that’s been brushed with luster dust. These are a fun and simple Avengers cupcake to make for any fan’s birthday party.

I have to confess I’ve always been a HUGE fan of Batman even as a little girl, but these guys in my life have me sucked into all of these Marvel movies. They also have me sucked into Star Wars but that’s a whole different subject.

We haven’t been to the movies to see Avengers: Infinity War, but my husband has been hinting. He just said to me a couple of nights ago that he’s trying to avoid any spoilers and it’s been nearly impossible. Of course, that triggers our six-year-old to start telling him about all of the previews thinking it was funny to spoil it his dad.

It didn’t, thank goodness. Could you imagine carefully dodging all of the posts on Facebook and have it all ruined by the little guy in the house? That would have been so funny to watch.

We didn’t watch Thor: Ragnarok in the theaters either. We waited until it hit the red box. We rented it a second time when we visited my family because it was that good. That’s also the reason that I almost didn’t do these cupcakes. I don’t want to ruin the movie for anyone so here’s my warning. This is a SPOILER ALERT.

Mjolnir gets crushed into itty bitty pieces. We are assuming that he gets an axe somehow, but that must happen in Avengers: Infinity War. We figured that out by browsing the toy section at Walmart.

Ingredients for Thor Cupcakes

Red Velvet Cupcakes

The red velvet cupcakes are made from a red velvet cake mix, but I do have a red velvet cake recipe that you can use instead and that recipe is so tender and scrumptious. My recipe may yield more than the 24 cupcakes that the box mix does, but I’m not positive. I’m thinking probably 30 – 32 cupcakes, but don’t quote me on that.

Red Velvet Frosting

The red velvet frosting has a light chocolate flavor to it like red velvet cake does from the cocoa powder. It’s still light enough to color red with gel paste food color. The frosting is piped on top of the cupcakes with a Wilton 1M piping tip. My very favorite tip.

Avengers Cupcake Topper

This Avengers cupcake topper is probably the easiest thing to make. Add a little black gel paste food color to white fondant to give it a gray color. Work it together with your fingers. It will be a little sticky. Dust your fingers with cornstarch to help with the stickiness. Once it’s worked in, make 1/2-inch balls and shape them into rectangles. I like to do it by pressing the sides gently against a flat surface. Keep working it until you’re happy with the rectangle. Dust with silver luster dust to get that silvery finish. Add a small pretzel stick in the bottom of the rectangle. You can also dip the pretzel in some chocolate candy melts if you want to add another step.

Ingredients
  

Cupcakes

  • 15.25 ounce box red velvet cake mix, plus, eggs, oil, and water

Frosting

  • 1 cup butter, room temperature
  • 7 cups powder sugar
  • 4 tablespoons whole milk
  • 2 tablespoons unsweetened cocoa powder
  • 7-8 drops red gel food coloring

Cupcake Topper

  • 4-6 ounces white fondant
  • 2 drops black gel food coloring
  • 3-5 tablespoons cornstarch
  • silver food luster
  • 24 mini pretzel sticks

Instructions
 

  • Prepare your 15.25 ounce box red velvet cake mix as directed on box. Allow to cool completely before decorating.
  • In a large mixing bowl, add 1 cup butter. Beat with hand mixer until creamy.
  • Add the 7 cups powder sugar, 4 tablespoons whole milk, and 2 tablespoons unsweetened cocoa powder in with the butter. Beat on low until the powdered sugar is just incorporated.
  • Add the 7-8 drops red gel food coloring and turn mixer on high and begin beating until the butter is thick and whipped. This will take about 1 – 2 minutes. Scrape down the sides and bottom of the bowl and beat in any frosting that isn't red. Add in additional red food color if needed.
  • Add the frosting into a piping bag fitted with the 1M piping tip. Pipe a swirl on each cupcake.
  • Add the 2 drops black gel food coloring to the 4-6 ounces white fondant. Work it together using your hands until the fondant is a solid light gray color. Dust your hands with cornstarch if it gets too sticky.
  • Line a baking sheet with wax paper. Roll your fondant into ½ inch balls and place on the wax paper. You’ll want to make 24 of them.
  • Shape into rectangles. Place each one back on the lined baking sheet. Dust your fingers with cornstarch as needed to help with the stickiness.
  • Brush each fondant rectangle piece with silver food luster. Insert a pretzel stick at the bottom of each one. Break off a piece of the pretzel stick if they are too long. Position on top of each cupcake.
