Bananas – Use ripe bananas that are yellow with a few brown speckles on them. Overripe banans will be too soft and underripe bananas won’t be as sweet and just kind of bland in flavor.

Chocolate Chips – Milk chocolate creates a sweeter coating while semi-sweet and dark chocolate provide a richer flavor. They will all work wonderfully for these chocolate bananas.

Refined Coconut Oil – Use refined unless you don’t mine the flavor of coconut in your chocolate. This helps thin the chocolate slightly for easier coating and creates a smoother finish.

Step 1: Prepare the Bananas. Line a small baking sheet with parchment paper. Peel the bananas and cut them in half. Insert a popstick stick about halfway into the cut end of each bananas.

Step 2: Melt the Chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval, until smooth and fully melted.

Why won’t my chocolate melt smoothly?

Why is my chocolate thick?

The chocolate may need a little more coconut oil. I recommend melting the coconut oil if your chocolate is already melted. Add about an additional teaspoon of the melted coconut oil to the melted chocolate and stir until combined. If you think it needs more, be sure add the oil in small increments.

Can I make this ahead of time?

Oh yes! They’re perfect for making ahead and store in the freezer.

Can I use frozen bananas?

Fresh bananas work best. Frozen bananas will be impossible to get a stick into and they will become too soft to coat in chocolate if they thaw at all.

  • Line a small baking sheet or tray with parchment paper and set aside. Make sure there is a flat space in your freezer to place the baking sheet.
  • Peel 2 ripe bananas and cut them in half.
  • Insert a popsicle stick in the cut end of each banana half, push in about halfway in the banana.
  • In a small microwave-safe bowl, combine the 1/2 cup milk chocolate chips and 1 teaspoon refined coconut oil. Microwave in 30 second increments, stirring after each increment, until the chocolate is melted and smooth, about 90 seconds in total.
  • Using a spoon, coat each banana evenly with melted chocolate (I like to hold the banana upside down and use the spoon to scoop the chocolate all the way up to the popsicle stick and let the chocolate slide down, repeat until entire banana is covered, then I use the back of the spoon to spread it out evenly).
  • Place each chocolate covered banana on the prepared baking sheet. Decorate as desired and place in the freezer for at least 2 hours. Enjoy frozen!
