Add the chopped 9 medium (2.5 lbs) gala apples to the inner pot of the Instant Pot.
Add in 1/4 cup granulated sugar, 1/8 teaspoon salt, 1 teaspoon fresh lemon juice, and 3/4 cup unsweetened apple juice. Stir until the sugar is well combined.
Put the lid on the pressure cooker and set it to manual high for 5 minutes. Allow for a quick pressure release.
For smooth applesauce
Allow apples to cool.
Add the apples to a food processor or use a stick blender to process/blend until completely smooth.
For chunky applesauce
Mash with a potato masher until the applesauce is to a chunky consistency you're happy with.
Add the 1 teaspoon ground cinnamon to the applesauce and stir until combined.
Let cool to room temperature if you opted for chunky applesauce.
Cover with plastic wrap and store in the fridge.

Storage: The applesauce will keep fresh in the refrigerator for one week.
