St. Patrick’s Day Cookies are an easy way to serve up a sweet treat that is full of green color in every bite. This recipe uses a boxed cake mix so it makes it crazy simple to make.
Add the 15.25 ounce box white cake mix, 1/3 cup vegetable oil, and 2 large eggs to a large bowl. Stir together with a spatula until it comes together into a sticky dough.
Add ¼ teaspon Kelly green gel food coloring. Mix until the food coloring is evenly distributed.
Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
Add the3 tablespoons granulated sugar to a small bowl.
Add the 6 tablespoons powdered sugar in a separate small bowl.
Using a 1 tablespoon cookie scoop, scoop the dough and roll into balls between your hands.
Place the cookie dough in the granulated sugar and roll around until completely coated.
Next, add the cookie dough ball in the powdered sugar and roll around until completely coated.
Place on lined cookie sheet about 2 inches apart from each other.
Place in the oven and bake for 9 to 12 minutes. Let cool for 5 minutes on the cookie sheet and then transfer to a paper towel or wire rack.
Store in an airtight container.
Notes
Mint Cookies: To make these minty, add about 1/4 to 1/2 teaspoon of mint extract to the cookies when adding the vegetable oil and eggs. Storage: Store in an airtight container at room temprature for up to 5 days.
