These
Potato Chip Cookies
are a soft chocolate chip cookie that's filled with salty, crunchy potato chips and semi-sweet chocolate chips!

Ingredients
6
tablespoons
butter
melted
3/4
cup
light brown sugar
packed

large egg
1
large egg yolk
2
teaspoons
vanilla extract

cup
all-purpose flour
1/2
teaspoon
baking soda
1/4
teaspoon
salt
1/2
cup
semi-sweet chocolate chips
1
cup
wavy potato chips
crushed
Instructions
Preheat the oven to 325 degrees F and line a baking sheet with parchment paper.
Add the
6 tablespoons butter
and
3/4 cup light brown sugar
to a large mixing bowl. Using a hand mixer or a whisk, beat until light and fluffy.
Add in the
1 large egg
,
1 large egg yolk
, and
2 teaspoons vanilla extract
. Continue to beat until incorporated.
Add the
1 cup all-purpose flour
,
1/2 teaspoon baking soda
, and
1/4 teaspoon salt
. Mix until everything is well combined.
Fold in the
1/2 cup semi-sweet chocolate chips
and
1 cup wavy potato chips
.
Using a cookie scoop, scoop the dough onto a cookie sheet leaving 2 inches in between the cookies.
Add 2 to 3 additional chocolate chips and potato chips to the top of the cookie dough for aesthetics.
Bake for 12-15 minutes, just until the edges are cooked and the middle isn’t wet.
Allow to cool for 5 minutes on the cookie sheet before moving to a sheet of wax paper or a cooling rack.
Store in an airtight container.
