These Peanut Butter Butterscotch Cookies are thick, chewy, and so delicious! They're loaded with peanut butter and butterscotch chips to enjoy in every bite.
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
In a mixing bowl, add in the 1 cup butter and 1 cup creamy peanut butter. Mix with a hand mixer on medium speed until combined.
Add in the 1 1/2 cups light brown sugar and 1/4 cup granulated sugar. Mix until combined. Scrape down the sides.
Add in the 1 large egg and 2 teaspoon vanilla bean paste. Mix until the egg is incorporated. Scrape down the sides of the dish.
Add in the 2 1/4 cups all-purpose flour, ½ teaspoon baking soda, and ¼ teaspoon salt. Mix until the flour is incorporated.
Stir in 11 ounce bag butterscotch chips until mixed throughout the dough.
Using a 2 tablespoon cookie scoop, scoop the cookies onto the prepared pan. Place them about 2 inches apart.
Place into the oven and bake for 17 minutes. Remove from the oven and let cool for 10 minutes. Place onto a wire rack to cool completely.
Notes
You can substitute the creamy peanut butter with crunchy peanut butter and the butterscotch chips with any chocolate chip you would like. Storage: Store in an airtight container at room temperature for up to 5 days.
