Ingredients
2
cups
old fashioned rolled oats
3
cups
unbleached flour
3
large eggs
1
cup
low sodium beef stock
Instructions
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
Place the
2 cups old fashioned rolled oats
in a food processor and grind until a coarse oat flour forms.
Add the oat flour,
3 cups unbleached flour
,
3 large eggs
and
1 cup low sodium beef stock
to a large bowl. Using a hand mixer, beat until combined.
Place the dough on a well-floured area and roll out to 1/4 inch thickness.
Cut with gingerbread man cookie cutters and transfer to the prepared cookie sheet.
Place in the preheated oven and bake for 20-30 minutes.
Allow the cookies to cool for 5 to 10 minutes on the cookie sheet before transferring to a cooling rack or paper towel to cool completely.

: Store in an airtight container at room temperature or in the fridge for up to 3 weeks.
