These Chocolate M&M Cookies are the perfect homemade chocolate cookie studded with M&M's and chocolate chips. They're rich, chewy, and make a nice addition to any cookie platter.
In a large mixing bowl, add the 1/2 cup butter and ¾ cup granulated sugar. With a hand mixer on medium speed, beat until light and fluffy, about 2 minutes.
Add the 1 large egg and 1 teaspoon vanilla extract. Beat until combined.
Add the 1 cup all-purpose flour, ¼ cup unsweetened cocoa powder, and 1 teaspoon baking soda to the wet ingredients. Beat on low until the flour and cocoa powder is mostly worked in and turn the mixer to medium and beat until completely incorporated.
Stir in the ½ cup chocolate chips and ½ cup M&M's until they’re evenly distributed into the cookie dough.
Cover the cookie dough with plastic wrap and place in the fridge to chill for at least 30 minutes.
While the dough chills, preheat the oven to 350 degrees F.
Once the dough has chilled, use a 1 tablespoon cookie scoop and scoop the dough out onto a parchment lined baking sheet 2 inches apart.
Add 2 additional M&M’s and 1 to 2 chocolate chips on the top of the balls of cookie dough and slightly press in.
Place the cookies in the preheated oven for 12 to 14 minutes until the edges are set.
When you remove the cookies from the oven, tap the cookie sheet on the counter a few times to help the cookies sink while they rest. Allow the cookies to cool 5 to 10 minutes on the cookie sheet before transferring them to the wire rack or paper towel to cool completely.
Sprinkle with sea salt flakes, if desired.
Once the cookies are completely cool, place them in an airtight container and store at room temperature.
