This easy old-fashioned blackberry cobbler takes 10 minutes to put together and 7 simple ingredients. The cobbler is buttery and cake-like with pockets of blackberries throughout it.
4tablespoonssalted buttermelted and slightly cooled
2cupsfresh blackberrieswashed and patted dry
Instructions
Preheat oven to 375 degrees F. Grease an 8x8-inch square baking dish with nonstick cooking spray. Set aside.
In a large bowl, add the 1 cup all-purpose flour, ½ cup sugar, 2 teaspoons baking powder, 1 teaspoon vanilla extract, ½ cup whole milk, and melted 4 tablespoons salted butter. Whisk until smooth.
Pour the batter into the prepared baking dish and smooth out evenly into all corners with a spatula.
Scatter 2 cups fresh blackberries evenly over the top of the batter.
Sprinkle the remaining ¼ granulated sugar evenly over the top of the blackberries.
Place in the preheated oven and bake for 30-35 minutes or until the top of the cobbler turns a light golden brown.
Serve warm with vanilla ice cream or whipped cream.

Storage: To store any leftover blackberry cobbler, place in an air tight container or cover with plastic and store in the refrigerator for up to 4 days.
