Raspberry Lime Curd

This Raspberry Lime curd is sweet and tangy! It's the perfect filling for cakes and cupcakes, spread on a biscuit, or straight from the jar!

How To Make Raspberry Lime Curd

INGREDIENTS

– raspberries heaping – large egg yolks –  granulated sugar –salt –  cornstarch –  key lime juice –  butter cold –  raspberry extract

Step 1

Press the fresh raspberries through a fine mesh strainer, divide the egg whites and yolks

In a medium saucepan add in the sugar, salt, and cornstarch, Add in the ½ cup fresh raspberry juice and key lime juice

Step 2

Pour in juice mixture into egg yolks, let raspberry mixture come to boil

Step 3

 Remove from the heat and add the cold butter and raspberry extract. Whisk until the butter is melted and well combined. Place in a shallow dish and cover with plastic wrap
