Place the chocolate candy melts and shortening in a microwave-safe bowl. Place in the microwave in 30 second intervals and stir after each time. My chocolate took 3 30-second intervals to be completely melted and smooth.
Dip the lollipop stick in the chocolate and place it in the bottom center of the marshmallow. Repeat to all the marshmallows and let the chocolate dry. It will take about 5 minutes for the chocolate to dry.
Once the stick is sealed in the marshmallow, dip the entire marshmallow in the chocolate. Top off the excess chocolate. I used the back of a butter knife to flatten out the chocolate on the marshmallow. It's not necessary to do this.
While the chocolate is still wet, sprinkle the graham crackers on the chocolate. Make sure you don't do it over your chocolate bowl, otherwise you'll have lumpy chocolate. :(
