Instructions
Preheat oven to 350 degrees F. Line the bottom of a 7x11-inch baking pan with parchment paper. Spray the parchment paper and sides with nonstick cooking spray.
In a large bowl, add cake mix, melted butter, egg, and vanilla extract. Beat with a hand mixer on medium speed until combined.
Evenly press the batter into the bottom of the prepared baking pan.
Place in the preheated oven for 18 to 23 minutes. The edges will be golden brown and when placing a toothpick into the center of the bar, it should come out clean or with moist crumbs.
Sprinkle the marshmallows and then the M&Ms on top of the bars making sure evenly distribute them both.
Place the bars back in the oven for 2 to 3 minutes. The shells of the M&M's will crack slightly and the marshmallows will melt into each other.
Remove from the oven and let the bars cool completely.
Using a sharp knife, cut into 12 bars to serve. The knife may stick to the marshmallows. To avoid this as much as possible, spray your knife with a little nonstick cooking spray or run very hot water over the knife and wipe it clean before making each cut.
Store in an airtight container at room temperature.
