Easy and delicious green eggs cookie balls to celebrate Dr. Seuss's birthday! They are the perfect recipe to get your kids in the kitchen with you. They have a golden oreo and cream cheese center, and the rest is made with candy melts.
In a food processor, add in the golden oreos and cream cheese. Pulse until the cookies become crumbs and then turn into a cookie dough ball.
Using a 1 tablespoon cookie scoop, scoop dough balls and place on a baking sheet lined with a piece of wax paper
Roll each cookie ball between your palms until it's smooth and in a ball shape. Sit it back on the wax paper.
Let the cookie balls chill until firm. They should have a flat bottom which is perfect for the egg yolk.
Add the green candy melts into a microwave-safe bowl. Microwave for 30 seconds and stir after each interval. Repeat until the green candy melts are completely smooth.
Using a fork, drop the cookie ball into the candy melts and roll until covered. Pick the cookie ball up and make sure the flat side is facing down. Tap off the excess candy melt on the cookie ball while it's still on the fork by tapping it on the side of the bowl. I like to drag the bottom of the fork across the rim of the bowl to help remove any excess candy melts.
Using a skewer, push the cookie ball off onto the wax paper. Let it dry.
After the cookie balls are dry, spread them out on a piece of wax paper. You'll need room to make the egg whites. Also, remove any green candy melt that sticks out beyond the cookie ball by either breaking it off or using a knife to cut it away.
Add the black candy melts into a microwave-safe bowl. Microwave for 30 seconds and stir after each interval. Repeat until the green candy melts are completely smooth.
Add the black candy melts to a disposable piping bag or a storage bag. Cut a small hole in the corner of the storage bag or piping bag.
Keeping the bag close to the wax paper, pipe the outline of the egg whites using heavy pressure to produce thicker lines. Use your finger or a piece of paper towel to stop the flow of the candy melts. Repeat for each cookie ball.
Remove the cookie balls from the center of each egg and set aside.
Add the white candy melts into a microwave-safe bowl. Microwave for 30 seconds and stir after each interval. Repeat until the green candy melts are completely smooth.
Add the white candy melts to a disposable piping bag or a storage bag. Cut a small hole in the corner of the storage bag or piping bag.
Fill in the center of 3 - 4 of the black outlines. You can use a toothpick or skewer to fill in any holes and help spread the white to the black outline. Be sure to only do 3 - 4 at a time so they don't dry before you have time to spread them out and add the cookie ball into the center.
Add the cookie ball on top of the white. Use the toothpick or skewer to make sure the white goes up to the cookie ball.
Let the green eggs set up for about 30 minutes to 45 minutes. The time will also depend on how cool/warm your kitchen is. They're ready when they can pull away from the wax paper without sticking.
Can be served at room temperature, but should be stored in the fridge.
