Easy Fruit Pizza

This easy fruit pizza makes the perfect summer dessert! There's a sugar cookie base, a lemony cream cheese layer and loads of fresh fruits.

Ingredients

  • 16.5 oz. package sugar cookie dough
  • 8 oz cream cheese room temperature
  • 1 tsp. lemon zest
  • 1 T. lemon juice
  • 1/2 c + 2 T. powdered sugar
  • 2 T. heavy cream
  • 8 strawberries sliced
  • 1 kiwi sliced
  • 1/2 cup blueberries

Instructions

  • Preheat oven to 350 degrees. 
  • Press the dough into a 12 inch round pizza pan. 
  • Bake the crust for 25 minutes until the edges are golden brown and the center is set. Remove from oven and let cool.
  • In a large bowl, beat the cream cheese on medium until creamy.
  • Mix in the lemon zest, lemon juice, powdered sugar and heavy cream until incorporated. 
  • Once everything is incorporated, beat on medium for 1 minute.
  • Spread the cream cheese mixture on top of the cookie base.
  • Slice the fruit using a mandoline or knife and place on the pizza.
  • Refrigerate until ready to serve.
