This month's peanut butter bash ingredients are peanut butter and oatmeal. I wanted to go healthy and make some granola. I was all excited for this "healthy" recipe and was telling my mom all about it. She broke it to me not-so-gently that this was not at all healthy. I believe it went kind of like this, "HUH! I thought granola was supposed to be healthy for you. Not YOURS!"

It's true. Even with my best intentions, I can crush a healthy recipe. What's a girl that loves sweets to do?

I like granola in large pieces. It's easy to pick up and scarf down. It could easily be made into the granola that you eat as cereal or sprinkle on yogurt. Leave out the egg white and stir it while it's in the oven. But seriously, why mess with a great recipe?

Ingredients
  

  • ½ cup creamy peanut butter
  • ¼ cup unsalted butter
  • cup light brown sugar packed
  • 1 tablespoon vanilla extract
  • 2 cups old fashioned oats
  • cup peanuts coarsely chopped
  • 1 large egg white

Instructions

  • Preheat the oven to 350 degrees F. Line a jelly roll pan or baking sheet with edges with parchment paper.
  • In a medium bowl, add the old fashioned oats and chopped peanuts.
  • In a medium saucepan, add the peanut butter, butter, and brown sugar. Turn the heat to medium and stir to combine the ingredients.
  • Once the butter is completely melted and the sugar is no longer grainy, remove from the heat. Add in the vanilla and stir.
  • Pour the peanut butter mixture over the oats and stir until the oats are completely coated.
  • In a separate bowl, add the egg white. Whisk the egg white until it is frothy and white. It should take about 1 to 2 minutes of whisking.
  • Pour the egg white into the peanut butter and oat mixture and stir to incorporate.
  • Place the granola on the prepared pan and spread out. Make sure the granola isn't layered too thick but can be flattened into large pieces.. This will help bigger chunks to form.
  • Bake for 10 to 15 minutes and turn the pan around. Do not stir the granola. Stirring the granola will make it break apart.
  • Bake for an additional 10 to 15 minutes and remove from the oven. Let the granola cool completely. It will come out soft but will harden as it cools.
  • Break into suitable pieces and store in an airtight container.

  1. Oven - 350 for 20 minutes. It looked too crispy so I turned down to 300. At 15 more minutes it was completely burned. The cook time / temp on this needs to be looked at.1 star

    1. Thanks for the tip Rafael! I have never had an issue with the cooking time but I will definitely give the recipe a try again and see exactly how long the granola bakes in my oven.

  2. I followed the recipe to a “T” and it totally burned ???. I took it out with ten minutes left on the timer and it was BLACK. What went wrong?!?!?

    1. Oh no! Sorry your granola burned kelly! Sometimes different ovens cook at different times/temperatures. You may have a hotter oven and granola does quickly go from golden brown to burned in a matter of minutes. If you make the recipe again, cut the baking time by about 5-10 minutes and start checking to see if the granola is golden early. Hope this helps.
