Who’s ready for spring to be here? Here in Upstate New York, it doesn’t look like it will be coming this week. Chilly weather is some snow is in our forecast. Are you ready for spring to be here or has it already sprung where you are?
With Easter coming right up, I thought a carrot cake recipe would be perfect. Actually, it was quite the toss-up between these cake pops and german chocolate truffles. I was so indecisive that I had to have my husband pick the recipe for this month’s baking challenge.

Monthly Baking Challenge
For this month’s recipe, we picked out the cream cheese carrot cake cake pop recipe. It’s a homemade carrot cake recipe that’s crumbled up and has cream cheese mixed in. The cake pops are can be coated with candy melts or almond bark. You can leave them plain, add sprinkles, pecans, a dusting of cinnamon, whatever your heart desires.
I randomly selected a winner using random.org. Melissa Costa is the winner this month. She will receive the $50 Amazon gift card! I’ll be notifying her in the Cookie Dough and Oven Mitt VIP group just in case she doesn’t see it in the email.

2. Snap a photo of it.
3. Share your photo in the Cookie Dough and Oven Mitt group with the hashtag #bakingchallenge by March 31st at 11:59 PST. You’ll have to request to join the group if you haven’t already.
