July 4th Whoopie Pies!

Who's excited for the fourth of July? Everyone. I love seeing all the red, white, and blue foods via pinterest. It gets me in the spirit. I wanted to make a red, white, and blue treat so I whipped together some white whoopie pies with some red and blue food coloring thrown into the mix.

I love gel paste color to add pizzazz to my cookies. You will always get vibrant colors while using gel paste color.

What types of things do you do to celebrate the 4th of July? We plan on heading up to the park near us where they're having battle of the bands, kids bounce houses, baseball game, and fireworks. Last year we went to the same park for a large portion of the day and Lucian didn't really make it to the end of the night for the fireworks. He slept right through the huge bangs and the ooo's and ahhh's. It's no surprise to use since he's done it the last two years.

The first year he was just over a month old and we were able to watch the fireworks on our second story sun porch. We've since moved several hours away to my husband's hometown.

I don't really have any plans for the weekend following the Friday the 4th. No party, but we might have to sneak up to my in-laws pool if it's ready by then. Shhh.. don't tell them!

Ingredients
  

Whoopie Pies

Frosting

  • ½ cup salted butter room temperature
  • 1 T. vanilla extract
  • 1 T. milk
  • 2 cups powdered sugar

Instructions

Whoopie Pies

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • In a mixing bowl, add the butter and sugar. Mix on medium until light and fluffy.
  • Add in the egg whites and continue mixing on medium until incorporated.
  • Add in the sour cream and vanilla and continue mixing on medium until combined.
  • Add in the baking soda, baking powder, and flour. Mix until just incorporated.
  • Place a straight tip in a piping bag. Then run some gel paste food coloring on both sides of the bag using a knife. Add in the white whoopie pie batter. I would recommend adding all of it so make sure you have a decently large bag.
  • Pipe out nice round mounds of batter. Try to make the mounds the same size.
  • Place in the oven and bake for 7 minutes or until done.
  • Let cool.

Frosting

  • In a mixing bowl, add in the butter and whip on medium speed.
  • Add in half of the powdered sugar and mix on low until the powdered sugar is combined with the butter. It will be thick.
  • Add in the milk and vanilla and mix on medium until incorporated.
  • Add in the remaining powdered sugar and turn the mixer to low. Let it go until the powdered sugar is incorporated and then turn it to high and let it whip for a minute.

Assemble

  • Match up the cooled whoopie pie cookies so the top and bottom are about the same size.
  • Place a 1M tip in a piping bag and add the frosting to it.
  • Pipe a nice circle around the whoopie pie cookie and place the other cookie on top. Repeat to all cookies.
