Summer is finally here! It’s hot outside, but that’s not going to stop us from baking for the July Baking Challenge! Are you ready for me to announce the monthly baking challenge? I’m thinking of berries this month. Scroll to the bottom of the post to find out what this month’s baking challenge recipe is.
I just remade and photographed the baking challenge recipe for this month and man is it good. It’s from 2014 so the picture is the picture isn’t the best, but that’s okay. I’ll add the new photos when I actually have a minute to sit down and edit them. I’ve been spending a lot of time on a couple of projects.
I’m so excited to see so many participants in June! Thanks everyone that joined the baking challenge. It literally made my month. Let’s make that happen in July too!! We had 8 entries and they all looked amazing! There was chatter in the group about baking this key lime cheesecake in an instant pot, but I don’t think anyone tried it. The recipe will make more batter than a 7-inch pan can hold, if anyone does give it a try, keep that in mind.
Monthly Baking Challenge
For this month’s recipe, I picked a blackberry cheesecake recipe. For this recipe, you can use fresh or frozen blackberries. I *think* I probably used fresh back in 2014 because there was a beautiful blackberry patch in town I used to pick from. When I remade the recipe, I used frozen blackberries and everything turned out beautiful.
Here’s something to keep in mind for this recipe. You’ll have little or maybe in large cracks from swirling the blackberry sauce into the cheesecake after it bakes. After you swirl the blackberry sauce, try giving it a few taps on the counter before baking it. That might help or it might not. The cracks are fine, so don’t be alarmed.
