Peanut Butter Brownie Bites have a rich fudgy brownie bottom that is topped with a soft peanut butter ball and a chocolate drizzle. These would be great to whip up for holidays, weekday treats, or for any gathering.

These are brownies that got the ultimate upgrade if you ask me! I'm a lover of brownies even though I don't seem to make them that often.

How to make Buckeye Brownie Bites

Start by making the peanut butter balls. Add the peanut butter, powdered sugar, and butter to a mixing bowl and beat until combined.

Use a 1 tablespoon cookie scoop and scoop the peanut butter balls and roll between your palms. Place on a parchment paper lined baking sheet.

Work on the brownies next. Add the brownie mix, oil, and eggs to a large bowl and beat with a hand mixer until combined.

Fill each cavity of the mini muffin pan half full and bake for 15 minutes or until done.

Immediately press the peanut butter balls into the baked brownie bites. Let cool slightly before turning them out of the muffin tin.

Once cooled completely, melt the chocolate almond bark and drizzle on the tops of the buckeye brownie bites.

How Do You Bake the Brownies

You will bake your brownies in a mini muffin tin to make them brownie bites. This is going to give your brownies that perfect size, and then you can fill the top with a peanut butter ball and finish it with a drizzle of chocolate almond bark.

To keep this recipe as easy as possible, I find that using a boxed brownie mix works great, but if you prefer a homemade brownie recipe go for it! The choice is totally yours in terms of how you want it to taste.

Tips for Making Peanut Butter Balls

The key to a good peanut butter ball is the proper texture. If your balls are a little too crumbly, add in a bit more peanut butter.

If they are too thin add in more powdered sugar. Play with the consistency so that it can roll nicely and hold its shape.

Another great tip is to use a tablespoon cookie scoop to ensure that the size of your peanut butter balls are always the same. It saves so much frustration.

How To Store Buckeye Brownie Bites

You can store your buckeye brownie bites at room temperature or in the fridge. You'll find they will last longer in the fridge but everything will become firm and you'll have to let it come up to room temperature again before it softens some.

Either way, store them in an airtight container. They should last for about 5 days at room temperature if you don't eat them first.

Can you freeze these Brownie Bites?

Yes! These would be great to make ahead and pop in the freezer.

To freeze these Buckeye Brownie Bites, place them on a parchment-lined baking sheet in a single layer and place in the freezer until firm. Once firm, place in a freezer bag or freezer-safe airtight container and freeze up to 3 months.

Ingredients
 
 

Brownies

  • 18.3 ounce box family size brownie mix
  • 3 tablespoons water
  • ½ cup vegetable oil
  • 2 large eggs

Peanut Butter Balls

  • 1 cup creamy peanut butter
  • 4 tablespoons unsalted butter room temperature
  • 1 ½ cups powdered sugar
  • pinch of salt
  • 2-3 squares of almond bark

Instructions

Peanut Butter Balls

  • Add the peanut butter, butter, powdered sugar, and salt in a large bowl. Beat with a hand mixer on medium until combined. **See Note below.
  • Scoop tablespoon size balls with a cookie scoop, roll them and place them onto a sheet of wax paper. Set aside.
  • Preheat the oven to 350 degrees and spray a mini muffin pan with non-stick baking spray.

Brownies

  • In a large bowl, add the brownie mix, water, vegetable oil, and eggs. Beat until incorporated.
  • Fill each mini muffin cavity ½ full.
  • Bake for about 15 minutes or until a toothpick inserted in the center of the brownie comes out clean.
  • When taking the brownies out of the oven, immediately press a peanut butter ball into the top.
  • Allow the brownies to cool for 5 to 10 minutes in the pan before turning out onto a wire rack.
  • Once cooled, add the almond bark to a microwave-safe bowl and microwave for 20 to 30 seconds. Stir and repeat until the almond bark is smooth.
  • Using a fork, drizzle the chocolate across the peanut butter brownies. Cool to set the chocolate. Enjoy!

Notes

The peanut butter ball mixture should be like a cookie dough, if it’s too crumbly, add a little more peanut butter. If the mixture is too sticky, add some more powdered sugar.
