Sometimes, I get these brilliant ideas for recipes for things other than desserts. It happened just the other day with this lasagna grilled cheese. I was trying to think of something to make with Ragu other than a full on dinner recipe. Because my favorite sauce dish is and has always been lasagna, that kept coming back to me. Then it hit me as my kiddo requested for me to make him a grilled cheese what I wanted to do. I wanted to load as much cheese, hot sausage, and sauce onto two pieces of texas toast and grilled it to a golden brown perfection.

So I had garlic breath for a couple days afterwards, it was well worth it. My mouth really holds on to the garlic smell. Even with using the listerine that burns your mouth several times and brushing too, it was still really strong. My poor walking partner had to endure the smell, but she did it like a champ though!

I don't think everyone uses hot sausage inside their lasagna, but that's how my mama taught me and I think it tastes amazing. Be sure to drain all of the fat off the sausage though. It can become an annoyance if you try to skip that step. Plus, that's extra fat going into our grilled cheese. NO!

Okay, I didn't add green peppers to my lasagna grilled cheese even though my heart was begging me to. The other two members of the family really don't care for green peppers. I would go as far as to say that Wesley despises them. So, despite what my heart was telling me to do, I went without. BUT if your fam loves green peppers, add them! They are amazing in lasagna.

Lasagna Grilled Cheese

Two comfort foods in one! Lasagna and Grilled Cheese. This is an over the top grilled cheese sandwich that will quickly become a family favorite.

Ingredients
  

  • 2 hot italian sausage links removed from the casing
  • 1 tablespoon chopped onion
  • â…“ cup Ragu Homestyle Thick & Hearty Roasted Garlic Sauce
  • 6 slices of mozzarella cheese
  • ¾ cup ricotta cheese
  • 3 tablespoons parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon parsley
  • dash of salt
  • 6 slices texas toast
  • butter

Instructions

  • In a saucepan, add in the hot italian sausage links. Be sure you remove the sausage from its casing.
  • Add in the chopped onions and break the sausage apart with a spoon. Place over medium heat and let brown up and onions to become soft. Remove from heat and drain off the fat from the sausage.
  • Add in the ragu sauce and stir. Set aside.
  • In a medium bowl, add in the ricotta cheese, parmesan cheese, garlic powder, parsley, and salt. Stir to combine.
  • Butter one side of texas toast. Do this with all 6 pieces of bread.
  • Add a layer of ricotta cheese mixture, sausage and cheese and two slices of mozzarella cheese.
  • Place another slice of texas toast on top butter side up.
  • Place onto a grill pan that's been heating over medium/low heat.
  • Let the bread become golden brown and flip. Repeat with the second side. Make sure the pan isn't too hot that it's browning up the bread before the mozzarella cheese has a chance to melt. If this happens, reduce heat some.
  • Cut in half and serve. These are super filling!

Notes

To store any leftover Lasgana Grilled Cheese sandwiches, we recommend storing in an air tight container for up to 3 days. To reheat stick in the oven for 10-15 minutes or a skillet on the stove over medium heat, flipping to heat through both sides.
