Coffee Jello Shots

Do we have any coffee drinkers in the house? I am! I am! What better way to celebrate the New Year, but with beautiful coffee jello shots! There are only a bijillion ways to take your coffee, but this way will be with some creamer and sugar. So get your sweet pants on and let's party.

I have to admit that I haven't had jello shots in ages. So these little caffeine shots were a nice welcome to the mix. They're sweet, strong, and warming. ALSO, they're in these adorable little mugs. loveeee. The only thing that could make these better is a dark chocolate covered coffee bean to top off the shots. If only I had one.. oh wait, I did!

I was pleasantly surprised once I started putting together these shots how fast the jello set up. When I wrote the recipe I was thinking it was definitely going to be a timely recipe, but it wasn't bad.

Let me just warn you. These little guys are highly addictive and will sneak up on you. They're so pretty though, who wouldn't want to give these a shot. hahaha! Pun intended.

Have I ever told you about how I laugh at myself.. a lot. Normally I am the only one giggling, but I don't mind.

Ingredients
  

Bottom Layer

  • ¼ cup cold water
  • 1 pkg. unflavored gelatin
  • ¼ tsp. instant coffee granules
  • 2 T. coffee liqueur (Kahlua)
  • 2 T. Bailey's Irish Cream
  • ½ cup sweetened condensed milk

Middle Layer

  • ¼ cup cold water
  • 1 pkg. unflavored gelatin
  • 2 tsp. instant coffee granules
  • 3 T. sweetened condensed milk
  • ¼ cup Bailey's Irish Cream
  • 2 T. coffee liqueur (Kahlua)

Top Layer

  • ¼ cup cold water
  • 1 pkg. unflavored gelatin
  • 3 tsp. instant coffee granules
  • 2 T. sweetened condensed milk
  • ½ cup coffee liqueur (Kahlua)

Whipped Cream

  • ¾ cup heavy cream
  • ¼ cup powdered sugar
  • 8 dark chocolate coffee beans

Instructions

  • Wash and dry 8 small mug cups or disposable jello shop cups.

Bottom Layer

  • In a microwave-safe bowl, add in the water and package of gelatin. Let it sit for a minute. Add in the instant coffee and microwave for 1 minute. Stir.
  • Add in the Baileys Irish Cream, coffee liqueur, and sweetened condensed milk. Stir until incorporated. Fill about â…“ of each cup with the mixture.
  • Set aside and let gel. It will take 20-30 minutes.

Middle Layer

  • In a microwave-safe bowl, add in the water and gelatin. Let it sit for 1 minute. Add in the instant coffee and microwave for 1 minute. Stir.
  • Add in the sweetened condensed milk, Bailey's, and coffee liqueur. Stir until incorporated. Fill about â…“ of each cup with the mixture.
  • Set aside and let gel. It will take 20-30 minutes.

Top Layer

  • In a microwave-safe bowl, add in the water and gelatin. Let it sit for 1 minute. Add in the instant coffee and microwave for 1 minute. Stir.
  • Add in the sweetened condensed milk and coffee liqueur. Stir until incorporated. Fill about â…“ of each cup with the mixture.
  • Set aside and let gel. It will take 20-30 minutes.

Whipped Cream

  • In a mixing bowl on medium, whip the heavy cream until it becomes stiff peaks. This will be when the cream will stand straight up.
  • Add in the powdered sugar and mix on medium until completely incorporated.
  • Place in a piping bag with a 1M tip. Pipe swirls on the top of each jello shot.
  • Top each swirl of whipped cream with a chocolate covered coffee bean.
  • Refrigerate until ready to serve.
