I'm sorry to have been M.I.A. I had such big plans on continuing posting from Christmas to New Years, but Christmas morning my son and I came down with the flu bug. We're still fighting it. I think we both had a side infection to top it off. Lucian had an ear infection and I had sinusitis which is normal for me.

I know you're problem thinking that I should have back up posts just in case this kind of thing happened. I agree. My new years resolution is to work harder on my blog. One of the first things is to have a couple spare posts just in case I can't find the energy to function again. With a little guy and myself having a crappy immune system, having some spare posts is a must-have.

Back to these beautiful candied pecans. I LOVE these. There just can't be anything better than a crunchy cinnamon and sugar coated pecan. Holy cow.

Has anyone made any New Year's resolutions? I guess I sort of did, but it definitely wasn't to lose weight. I'll just tell you now that I suck at that. I would break that resolution at 11 a.m. on 1/1/14. It would only last as long as 11 because I'm not a morning eater. I don't care to eat any kind of breakfast unless it's a red light pile up from the restaurant I used to work at.

If you want a freaking delightful snack, make these little guys. They are totes mcgoats. Yep.

Candied Pecans

These Candied Pecans have a delicious crunchy shell and a sweet caramelized pecan flavor with a dash of cinnamon. They're the perfect snack and so delicious.

Ingredients
  

  • 2 cups pecan halves
  • 1 large egg white
  • 1 tablespoon water
  • ½ teaspoon vanilla extract
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  • Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a small bowl, add in the sugar, cinnamon, and salt. Whisk until everything is incorporated.
  • In a large mixing bowl, add in the egg white, water, and vanilla. Whisk until the mixture becomes very frothy. It will probably take 3-4 minutes of whisking.
  • Add the pecans into the egg white mixture and mix until the pecans are evenly coated.
  • Add half of the sugar mixture into the pecans and mix until the pecans are all coated.
  • Once the pecans are coated, add in the rest of the sugar and give it a good stir.
  • Place the pecans on the baking sheet. Make sure they are all spread out.
  • Place in the preheated oven and bake for 45 minutes. Flip the pecans every 15 minutes so they don't burn.

  1. What a lovely snack I like making candied nuts for foodie gifts. I hope you and your lil' guy are feeling better soon. It's a good idea to keep a few posts as back up I always do because of my job and sometimes I am miles away at sea and have no internet connection.... thank heavens for auto scheduling! I'm sure it will all fall into place 🙂
